How to Make Homemade Dairy-Free Ice Cream Using Coconut Milk

Coconut milk can be a tasty alternative to milk, but it does contain 64 calories and 7 grams of fat per ounce, which needs to be taken into consideration. For an ice cream recipe, you might want to substitute the sugar with your favorite alternative sweetener, like agave syrup or xylitol. Add this to my Recipe Box.

    Whisk together the egg yolks and sugar for a couple minutes until well-blended.

    Add both coconut milks and whisk again so that everything is combined.

    Pour the coconut mixture into a medium pot and cook over medium heat. Stir constantly for about eight to 10 minutes, until just thickened. Do not let the mixture come to a boil. Remove from heat and add the vanilla.

    Pour the mixture into a bowl and put in the fridge. When the mixture is cold, pour it into your ice cream maker and follow the instructions for your machine. Before processing you can add an cup of chopped fruit, if you wish.

    Store in a container with a lid in the freezer for about two hours or until firm before serving.
